Vegetarian filled paprika


Paprika filled with vegetarian "ground beef" made of soy protein

2 large paprikas
200 grams of vegetarian "ground beef"
1 large onion
3-4 cherry tomatoes
2 garlic cloves
Oregano, cumin, chili flakes, black pepper, salt
Parmesan cheese

Cut open the paprika, and keep the top. Set oven to 200°C.

Chop the onion and put in frying pan. Press (or chop) garlic, and add to frying pan. Stir until fragrant. Add vegetarian "ground beef" (and some water, if needed). Stir. Add spices (be generous with oregano and cumin). Dice and add tomatoes and the paprika top. Fry for 5 minutes.

Fill paprika with the vegetarian "ground beef". Grate some parmesan cheese on top. Put in oven and leave for 15-20 minutes (or until the cheese has gotten some colour).

Enjoy!

(The bread is just cut up baguette with oil and olive tapenade.)
